What to do with cherries that are almost too ripe to use? Anyone have a good cherry recipe that calls for fresh cherries? The ones I have seen in my google searches are yielding results that call for dried or canned cherries.

As Jenn posted today, she loves her David Lebovitz ice cream book, The Perfect Scoop. While I can't find the recipe for cherry ice cream on his blog, I believe this post points to a fresh cherry ice cream option.

I have a cookbook you can look through, it calls for a lot of fresh fruit and you can substitute the cherries in. I'll ask Sophie to bring it over today (since I have to go to work...).
